There are always some great alternatives to finding some great things to eat that are healthy and EASY to make. I love hummus, and one of my favorite places to eat is Pita Jungle. They have several locations around the Valley, but when they built one about 10 feet from the radio station, I was like a kid at Christmas! Anyway, I love their hummus with grilled chicken. It’s on the appetizer part of the menu, but I choose that as a meal. Very filling, and very healthy. One day, I said to myself “Hey, I can make that!”. So I researched hummus, what it is and how to make it tasty. The ingredients are pretty simple. This takes only a few minutes to prepare. Here is what it is.
2 (15 oz.) cans of garbonzo beans, drained, but save the juice from ONE of the cans
2 large garlic cloves (great for your breath and so tasty)
2 limes (squeeze the crap out of them!)
1/3 cup of Tahini paste (find it in the world food section of Fry’s Marketplace/or specialty store)
1 teaspoon of kosher salt
1/4 teaspoon of cayenne pepper (this is the ‘kick’ you can have or not, you’re call)
1/4 teaspoon cumin
1 tablespoon of extra virgin olive oil
Add all of the ingredients (except for your can of garbonzo bean juice) into your food processor (I have one of those Ninja blenders and it works awesome too). Blend that all up. While you are blending, add a little of the garbonzo bean juice until you get the desired consistency of hummus. I use ALMOST the can, not quite. DONE! Now, slice up some cucumbers, grill a few pieces of chicken, and you have a meal. SWEET! This feeds my family of four with a little left over. Perfect for dipping in front of the football game this Sunday or for a quick meal after work. Let me know how this one works for you. If you have a healthy recipe to share, please share!
