4th Of July Is SWEET!
If you’re having a fourth of July party – you NEED to have red, white and blue food!
Here are some fun ideas for YOU.
Red, White and Blue Potato Salad (yum!)
Whisk 1/2 cup green onions and next 7 ingredients in medium bowl. Cover and chill dressing. DO AHEAD Can be made 1 day ahead. Keep chilled.
Place all potatoes in large saucepan. Add enough water to cover by 1 inch. Sprinkle with salt. Bring to boil, reduce heat to medium, and boil until tender, 10 to 15 minutes (time will vary depending on size and variety of potatoes). Drain and cool to room temperature.
Cut potatoes into 1/2-inch-thick slices and place in large bowl. Add dressing, peas, and blue cheese; toss gently. Cover and chill at least 2 hours and up to 1 day.
Sprinkle potato salad with paprika and remaining 1/2 cup green onions.

Fourth of July KABOBS! EASY!
Supplies for 4th of July Kabobs:
- skewers, these are 10 inch
- strawberries, cut up in 4ths
- mini marshmallows
Patriotic Dipped Strawberries!
1 pint fresh strawberries (approx 12 oz)
Blue sanding sugar or sprinkles
Line a baking sheet or cutting board with wax paper or parchment paper.
Chop up the chocolate roughly with a knife if it is in block form. In a medium-sized, microwave safe bowl, melt the chocolate in the microwave. Heat it in 45 or 60-second intervals, stirring between each time to ensure that the chocolate is melting evenly and not burning. Meanwhile, place blue sanding sugar into a small bowl and set it aside.
When chocolate is smooth, dip the berries 3/4 of the way into the chocolate, dip the tips into the blue sprinkles, and place on wax paper.
Berries can set at room temperature if you live somewhere cool, otherwise refrigerate them until ready to serve to allow the chocolate to set up.
How about THIS healthy banana/watermelon split?
- Cut bananas in half lengthwise and place the halves on plates.
- Top with watermelon balls formed with an ice-cream scoop.
- Add dollops of whipped cream, then sprinkle on berries and chopped nuts or granola.
