OK, let me start off with the fact that I have been looking forward to this day for over 3 weeks now.
This is like telling a young child that you are going to Disney World, but it’s in a month. Finally, the day is here. Sandy and I walk down to the Santa Fe School of cooking, just steps from the Eldorado Hotel & Spa. (By the way, breakfast was amazing).
When we get to the school, we meet with Traci Ritter and Noe Cano who are in charge of the cooking demonstration for the day. This class is all about Traditional New Mexican Food…Cheese Enchiladas with red sauce, Chicken Enchiladas with Green Chile sauce, corn tortillas, Pinto Bean, Posole, and Capirotada which is a Pecan Bread Pudding.
Now this is more of a demonstration class to show how things are made, and how to use the New Mexican chiles and the difference in taste. I was asked to come up and assist with the preparation and plating of the food. HEAVEN! I felt like a true sous chef! I had an apron and everything. I was asked to saute’ the onions and make corn tortillas.
I got to plate the food for the guests that were there as well. That step seems to be more important than anything as it is the first thing the diner will see! This was truly a dream come true and an experience I will remember for a lifetime.
